Waffles with Plazma and Caramelized Bacon

Preparation

Heat the oven to 190°C.  Pour the brown sugar on a shallow plate and roll the pancetta pieces in it. Arrange them on a baking tray that you previously lined with baking paper, and then put it in the oven for about 15-20 minutes, or until the bacon turns a nice, brown, color. Be very careful near the end, because the bacon can easily burn. In a bowl, mix the flour, Ground Plazma, sugar, salt and baking powder. In a smaller bowl, separate the egg whites and the yolks and whisk them into firm foam. In a third bowl, blend the yolks, vanilla extract, melted butter and milk, and then gradually add the powdery ingredients mixture and mix together well. At the end, add the egg white foam and gently mix it so the egg whites don’t lose volume. Heat the waffle maker according to the manufacturer’s instruction, then make the waffles so they get a golden-brown color. Serve them with candied bacon, whipped heavy cream and honey or maple syrup.

Candied bacon

  • 100 g of finely sliced pancetta
  • 4 tablespoons of brown sugar

Waffles

  • 200 g of flour
  • 120 g of Plazma Ground
  • 2 level tablespoons of sugar
  • A pinch of salt
  • 1 ½ teaspoon of baking powder
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 60 g of butter
  • 300 ml of milk

Decoration

  • Heavy cream
  • Honey or maple syrup
