Blueberry muffins with Plazma

Preparation

In a bowl, mix the flour, Ground Plazma, oatmeal, baking powder and baking soda.

In another bowl, whisk the butter at room temperature, then add sugar, then eggs, one at a time,and then yogurt and flavourings. Add the dry ingredients to the moist ones, stir mildly just until combined, then add the blueberries and briefly stir. Distribute the dough evenly in tin muffin moulds with an ice cream scoop.

Make a crispy sprinkle by mixing Ground Plazma, sugar and melted butter in a small bowl. Sprinkle the muffins with this mixture.

Bake the muffins in the oven at 200 ⁰C for about twenty minutes i.e. until the toothpick stabbed in the middle of the dough comes out dry. Remove the muffins to the rack to cool, then serve.

Dough

  • 200 g of flour
  • 50 g of oatmeal
  • 50 g of Ground Plazma
  • 1 small bag of baking powder
  • a pinch of baking soda
  • 100 g butter
  • 100 g of sugar
  • 2 eggs
  • 200 ml of yogurt
  • Vanilla extract
  • 150 g forest blueberries (fresh or frozen)

Sprinkle

  • 50 g of Ground Plazma (2 full tablespoons)
  • 1 tablespoon of sugar
  • 20 g butter
